INGREDIENTS:

#1 Cozy Tofu and Bean Chilli

1 onion, chopped
1 red bell pepper, chopped
1 block of smoked tofu, crumbled up with your hands (200-300g) (7-10 oz)
1 can of diced tomatoes
1 cup of vegetable broth (250ml)
1 can kidney beans (240g)
2 tbsp ketchup
1 cup marinara sauce (250ml)
1 tsp unsweetened cocoa powder
1 tsp smoked paprika
salt, pepper to taste

1 cup of millet, dry (200g)

→ for a richer flavor saute the onion, pepper and tofu crumbles in 1 tsp olive oil before adding the remaining ingredients

→ 4 servings (can easily be doubled if you need to make more)

#2 Cinnamon Raisin Porridge

½ cup quick cooking oats (45g)
1 cup non dairy milk (250ml)
a pinch of salt
½ tsp cinnamon
⅓ cup raisins (50g)
2 tsp agave, maple syrup

→ serves 1

#3 Tahini Banana Smoothie Müsli Bowl

2 frozen bananas
½ tsp cinnamon
1 tbsp oats
1 cup vanilla non dairy milk (use less milk if you want it to be thicker) (250ml)

müsli of choice

→ serves 1

#4 Loaded Veggie Pizza

store bought pizza dough for 1 pizza

¼ cup marinara sauce (60ml) (or more if you want)

1-2 peppers, chopped
a handful of mushrooms, chopped
a handful of snap peas
1 onion, roughly chopped
1-2 tsp olive oil
sea salt
fresh thyme, oregano, parsley etc

2 tbsp unsweetened thick vegan yogurt
1 pinch of salt
1 squeeze of lemon juice

(or sub with 2 tbsp cashew cream or vegan cream cheese)

*cashew cream = ½ cup cashews boiled in water for an hour + ¼ tsp salt + 1 tbsp lemon juice blended in a food processor
