Crossroads Kitchen is an all-vegan restaurant in West Hollywood that makes eggs out of whipped yellow tomatoes, Indian black salt, and a few other secret ingredients. When popped over pasta or cheese-filled bread, it’s hard to tell the difference between these vegan eggs and the real thing.
