Ingredients:
MONDAY – Vegan Yogurt – Tahini Dressing:
4 tbsp vegan yogurt, unsweetened
juice of ½ lemon
1 tsp tahini
1 tsp agave
salt, pepper, italian seasoning to taste
TUESDAY – Hummus Sriracha Dressing:
1 tbsp hummus
1 tbsp lemon juice
1 tsp agave
sriracha to taste, I added ½ tsp
THURSDAY – Most basic Pumpkin Ginger Soup
1 small to medium sized pumpkin
1 onion
1 tsp fresh ginger, minced
4 cups veggie broth
1 bay leaf
1 can coconut milk
season to taste: sea salt, pepper, italian seasoning
juice of ½ lemon
